A classic of Australian childhood breakfasts, jam drops are made by pressing a thumbprint into a buttery dough and filling it with whatever jam is left in the jar. Sturdy enough for a lunchbox, it is a practical way to use up an opened jar of jam.

Sift the flour and baking powder into the mixture and bring together into a soft dough.
Roll the dough into walnut-sized balls, arrange on a tray, and press a small hollow into the centre of each with your finger.
Fill each hollow with a teaspoon of strawberry jam and bake in an oven preheated to 175°C for 20 minutes until the edges turn lightly golden.
Fill the jam right before baking; if added too early it bubbles over and spreads while cooking. Allergens: contains gluten (wheat), egg, milk and dairy (butter).
