An icon of Jamaican street food, the patty is made by filling a curry-yellow dough with a spicy beef filling and baking it until crisp. Sealing the buttery, flaky layers without breaking them takes practice.

How to make it?

Make the dough

Mix the flour, curry powder and salt, rub in the cold butter with your fingertips until sandy, then add the cold water to form a dough.

Make the filling

Sauté the beef with the onion, scotch bonnet pepper and thyme for 5 minutes, mix in the breadcrumbs and let it cool.

Fill and seal

Roll the dough thin and cut into circles, spoon filling onto one half of each circle, fold over and press the edges firmly with a fork.

Bake

18 min

Bake in an oven preheated to 200°C for 18 minutes until golden.

Reminder

Press the edges firmly closed with a fork, or the filling will leak out in the oven. Allergens: contains wheat (gluten).
