A quick favourite at Thai street stalls, kai jeow goong is made by pouring a shrimp-enriched egg mixture into plenty of hot oil so it puffs up and crisps. With crunchy edges and a soft centre, it is easy to scale up for a big table.

Lightly whisk the eggs with the fish sauce, flour and black pepper, then stir in the shrimp and spring onion.
Heat the olive oil in a pan until very hot, pour in the egg mixture all at once, and cook for 6 minutes until the edges puff and turn golden, then carefully flip and fry the other side for 4 more minutes.
Do not pour in the egg mixture until the oil is properly hot, or the omelette will soak up oil instead of puffing. Allergens: contains egg and shellfish (shrimp).
Adding the shrimp raw to the mixture rather than pre-cooking it keeps them juicier and more tender once they cook through with the egg.
