Prepare the fruit

Kalamansi, the small citrus that grows in nearly every Filipino backyard, is simmered whole with its peel and sugar to a quick marmalade. Tangy with a hint of bitterness, it brings a bright freshness to toast at any brunch table.
Slice the kalamansi into thin rounds and pick out the seeds one by one.
Combine the sliced fruit with the sugar and water in a saucepan, bring to a simmer over medium heat and cook for 25 minutes, stirring often, until thickened.
Ladle the hot marmalade into sterilised jars and seal, then store in the refrigerator once fully cooled.
Do not skip removing the seeds from the fruit, or the marmalade will turn bitter. Always make sure the jars are sterilised before filling.
