Cranberry sauce, a staple of Canadian Thanksgiving tables, starts here with cranberries lightly roasted in the airfryer. Sweetened with maple syrup and brightened with orange zest, the sauce pairs equally well with buttered bread or roasted meats.

How to make it?

Roast the cranberries

Wash the cranberries and spread them in a single layer in the airfryer basket, sprinkle with the orange zest and roast on a medium-high setting for 10 minutes; remove once the cranberries start to burst.

Simmer with the syrup

Transfer the roasted cranberries to a saucepan, add the maple syrup, orange juice, cinnamon stick and salt, and simmer over low heat, stirring, for 12 minutes until it thickens.

Let it rest

Remove the cinnamon stick and let the sauce rest at room temperature for 10 minutes, then transfer to a clean jar.

Reminder

The sauce thickens further as it cools, so do not overcook it even if it looks slightly loose on the stove. Be sure to remove the cinnamon stick before jarring, or the flavour turns bitter.
