The alcohol-free version of Canada's famous cocktail, this drink is made by squeezing and straining fresh tomatoes from scratch. Getting a clear tomato juice means waiting for the sediment to settle, resulting in a spiced drink garnished with a celery stalk.
Grate the tomatoes and pass them through a sieve to separate the pulp.
Chill the strained tomato juice for 30 minutes and let the sediment settle to the bottom.
Pour off the clear top layer into a separate jug, then stir in the Worcestershire sauce, hot sauce, lemon juice and salt.
Divide among ice-filled glasses and garnish with a celery stalk before serving.
Don't skip the step of letting the sediment settle, or the drink comes out cloudy and fibrous. Allergens: Worcestershire sauce may contain trace amounts of fish.
Doubling the hot sauce makes the drink noticeably sharper; in that case I would add an extra teaspoon of lemon juice too, to keep the balance.
