In this version, grated and squeezed-dry cauliflower replaces the usual pide dough, and getting the crust to hold together takes patience. Cooked lidless in a pressure cooker instead of an oven, it brings low-carb pide even to a stovetop kitchen with no oven.

How to make it?

Prepare the crust

Steam the grated cauliflower for 3 minutes, then squeeze it tightly in a clean cloth to remove all the water. Knead with the egg and kashar cheese and shape into a flat base about 1 centimetre thick.

Prepare the topping

Brown the ground meat with the onion in a pan, add the diced tomato, salt and black pepper, and cook for 3 more minutes.

Cook

12 min

Place the cauliflower crust on baking paper inside the pressure cooker, spread the meat topping over it, and cook with the lid closed but without the gasket or weight over medium heat for 12 minutes.

Reminder

Do not shape the crust before squeezing the cauliflower dry in a clean cloth; leftover water will make the base fall apart instead of holding together. Allergens: contains egg and dairy.
