15 minToss the sliced carrots with a spoon of olive oil and roast in an airfryer preheated to 200°C for 15 minutes until tender. If you do not have an airfryer, you can roast them the same way in an oven preheated to 200°C.
A classic Tunisian mezze, karrota is made by roasting carrots in the airfryer, then mashing and folding them into a garlicky harissa and cumin sauce. It is served cold or warm alongside bread.

Mix the crushed garlic, cumin, harissa paste and the remaining olive oil.
Roughly mash the roasted carrots with a fork and fold in the sauce, adjusting the salt; mashing too finely makes the mezze watery, so keeping it coarse matters.
Squeeze over the lemon juice, garnish with chopped coriander and serve.
Harissa paste varies in heat from brand to brand, so start with a small amount and add more to taste.
