A classic Tunisian mezze, karrota is made by roasting carrots in the airfryer, then mashing and folding them into a garlicky harissa and cumin sauce. It is served cold or warm alongside bread.

How to make it?

Roast the carrots

15 min

Toss the sliced carrots with a spoon of olive oil and roast in an airfryer preheated to 200°C for 15 minutes until tender. If you do not have an airfryer, you can roast them the same way in an oven preheated to 200°C.

Make the sauce

5 min

Mix the crushed garlic, cumin, harissa paste and the remaining olive oil.

Combine

10 min

Roughly mash the roasted carrots with a fork and fold in the sauce, adjusting the salt; mashing too finely makes the mezze watery, so keeping it coarse matters.

Serve

5 min

Squeeze over the lemon juice, garnish with chopped coriander and serve.

Reminder

Harissa paste varies in heat from brand to brand, so start with a small amount and add more to taste.

Bizim tarafta havuç mezesine biraz da nane eklenir, ben de bir tutam kuru nane ekledim; ferahlık kattı ve harissanın acılığını da bir nebze dengeledi, ailem de bu küçük dokunuşu gerçekten çok beğendi.

Havuçları airfryer'da 200 derecede 15 dakika kızarttım ama benim havuç dilimlerim kalın kalmış olacak ki 20 dakika sürdü. İnce dilimleyince ikinci seferde tam sürede yumuşadı.
