Langues de chat, a classic from French pastry shops, are the elegant way to use up egg whites left over after using the yolks in another recipe. Their thin, crisp texture and light sweetness make them a natural fit for a brunch tea table.

How to make it?

Whip the butter

Beat the room-temperature butter with the icing sugar until smooth.

Add the egg white

Add the leftover egg white in two additions, mixing well each time, then stir in the vanilla.

Fold in the flour

Gently fold in the sifted flour with a spatula until you have a batter that flows but holds its shape.

Pipe and bake

Pipe the batter onto baking paper in thin 6 cm strips, leaving space between them. Bake in an oven preheated to 180°C until the edges turn lightly golden.

Reminder

The cookies firm up fast once out of the oven, so move them to a wire rack right away or they can soften and crack on the tray. Allergens: contains wheat (gluten), dairy/butter and egg.

Pudra şekeri yerine sıradan toz şeker kullanabilir miyim, yoksa kurabiyenin dokusunu bozar mı? Elimde sadece toz şeker var ve hamuru bu akşam hazırlamak istiyorum, deneyip denememe konusunda kararsızım.

Toz şeker de olur ama pudra şekeri daha ince eridiği için kurabiye daha pürüzsüz çıkar; toz şeker kullanırsanız çırpma süresini biraz uzatıp iyice erittiğinizden emin olun.
