Kefta sandwich is a beloved Moroccan street lunch made by slow-cooking cumin and coriander-spiced meatballs in tomato sauce and stuffing them into a baguette. The long cooking time lets the meatballs fully soak up the sauce. Since the steps are so simple, even someone with little kitchen experience can make it comfortably.

Step by Step

How to make it?

1

Knead the meatballs

15 min

Knead the ground beef with the grated onion, cumin, coriander and salt, then shape into small meatballs.

2

Sear the meatballs

5 min

Heat the olive oil in a pan and sear the meatballs until lightly coloured on every side.

3

Simmer in the sauce

70 min

Add the grated tomato over the meatballs, cover and simmer over low heat until the meatballs soak up the sauce.

4

Fill the sandwich

5 min

Hollow out the baguette and fill it with the meatballs and their sauce, then serve hot.

Reminder

Lightly sear the meatballs before adding them to the sauce; raw meatballs cooked directly in the sauce fall apart and cloud it. Allergens: contains gluten (baguette).

Editor's Note Editörün Notu

Adding a teaspoon of sweet paprika to the sauce gives it a deeper, more appetising colour.

Köfteleri mühürlemeyi hiçbir zaman atlamadım ve tam 70 dakika boyunca yavaş yavaş sosta pişirdim, sonuç hem şekillerini koruyan hem sosu güzelce emmiş nefis köfteler oldu.

70 dakikalık pişirme süresi bende gerçekten biraz fazla uzun geldi ve köfteler kenarlardan hafifçe dağıldı, bir dahaki sefere tam 55 dakikada kontrol edip erkenden keseceğim.
