One of Greek cuisine's hearty crowd-feeding pilafs, this dish mixes cumin- and cinnamon-spiced ground beef with a tomato-paste sauce into rice. Suited to serving from a large tray, it is ideal for hosting guests.

How to make it?

Cook the mince

15 min

Sauté the onion in olive oil, add the mince, and cook with the salt, cumin and cinnamon for fifteen minutes.

Simmer the sauce

40 min

Add the tomato paste and water and simmer over low heat for forty minutes.

Add the rice and cook

25 min

Add the rinsed rice and cook over low heat for twenty-five minutes, until the liquid is absorbed.

Let it rest

15 min

Remove from heat and let it rest, covered, for fifteen minutes.

Reminder

Make sure the sauce is at a full boil before adding the rice, or the rice will not cook through properly.

If you do not like cinnamon, you can leave it out, though the characteristic sweet-spice balance of Greek cuisine will be a little less pronounced.

Kalabalık bir davet için ilk kez denedim ve büyük tepside servis etmek gerçekten çok pratikti. Tarçın miktarını biraz azalttım çünkü baharat sevmeyen misafirlerim vardı, yine de dengeli bir tat yakaladım.
