Add the ginger and simmer on low heat, stirring often, for 45 minutes until the jam thickens; watch carefully as kiwi's low natural pectin makes it prone to sticking.
Ladle the hot jam into clean jars, seal the lids, and turn them upside down to cool.
Do not walk away from the pot while it simmers; because kiwi is low in pectin, it sticks to the bottom more easily than other fruit. Fill the jars while the jam is still hot and seal immediately, or they will not seal properly.
For a thicker set, you can extend the simmering time by ten minutes, though the flavour will take on a slightly more caramelised edge.
