Sauté the ground meat in vegetable oil until it changes color.
Add plenty of onion and sauté until softened and lightly caramelized.
Add the grated tomato and tomato paste, and sauté for a few minutes.
Put the cubed celery root, bay leaf and boiling water in the pot, season with salt and black pepper, and cook over low heat until the celery root softens; drizzle lemon juice over before removing from heat. Important: give it enough time over low heat to cook the celery root well, otherwise the inside may stay tough.
Important: Softening the inner part of the celery can take time, so cook it over low heat for long enough. Caution: If you let the chopped celery sit, it can brown; we recommend starting to cook it right away.
If you cut the celery into small cubes, the cooking time shortens and the sauce takes on a more even consistency.
