A quick Georgian snack, pan-fried sulguni is made by slicing a semi-hard cheese thin and frying it in butter until golden on both sides. It is served hot, crisp on the outside and soft in the middle.

How to make it?

Prepare the cheese

Slice the sulguni cheese into 1 cm thick slices and dust both sides lightly with flour.

Fry

Melt the butter in a pan and fry the cheese slices over medium heat for 3-4 minutes per side until golden.

Serve

Scatter with dried mint and black pepper while still hot, and serve immediately.

Reminder

Do not flip the cheese too soon after it goes into the pan; turning it before the underside is properly golden can make it fall apart. Serve it hot, as it turns firm and rubbery once it cools. Allergens: contains wheat (gluten), milk and dairy.

Peyniri una bulayıp tereyağında 3-4 dakika kızarttım ama iç kısmı benim tavamda tam yumuşamadı, orta ateş yerine biraz daha kısık tutsam sonuç değişir mi? Dışı harika çıtırlaştı ama içini daha akışkan hayal etmiştim.

İçinin daha akışkan olmasını istiyorsanız orta ateşte kısaca, 3 dakika civarında tutup erken alabilirsiniz; kısık ateş daha çok kurutur, akışkanlığı korumaz.
