A summer staple in Colombia's coastal cities, cholado is made by layering crushed ice with fresh fruit, syrup and condensed milk. Served in glasses at parties, this colourful dessert is a refreshing classic for hot days.
Chop the strawberries, banana and pineapple into small pieces and mix them in a bowl.
Stir the fruit syrup together with the lime juice.
Crush the ice in a blender or ice crusher until it has a fine, snow-like texture.
Fill glasses with the crushed ice and layer on the fruit and syrup, then let them sit in the freezer for ten minutes before serving.
Drizzle with the condensed milk and serve immediately.
If you crush the ice too finely it will melt like water; pulse it in short bursts so it stays coarse. Allergens: contains dairy (condensed milk).
If you use coconut milk instead of condensed milk, the recipe becomes dairy-free, though you will need to adjust the sweetness level separately.
