Kotlet is a spiced Iranian dish made by kneading ground beef with grated potato and onion and turmeric, then shaping the mixture into thin ovals and frying until crisp. Getting a thin, crackling crust takes real skill, which is why it is a beloved breakfast and lunch item across Iran.

How to make it?

Prepare the mixture

Thoroughly knead the ground beef with the grated, drained potato and onion, egg, turmeric, black pepper, salt and breadcrumbs, then rest for 10 minutes.

Shape the patties

Shape portions of the mixture into thin, long ovals in your palm, keeping the surface smooth so it does not crack.

Fry

Heat the vegetable oil over medium heat and fry the patties until both sides are golden and crisp.

Reminder

Wet your hands lightly while shaping the patties; they will stick less and the surface will stay smoother. Adding the patties before the oil is hot enough can make them fall apart before a crust forms, so test the oil temperature with a small piece of the mixture first. Allergens: contains egg and wheat/gluten (breadcrumbs).

For a lighter version, you can bake the patties instead of frying them; the surface will not be quite as crisp, but the amount of oil used drops noticeably.

Kotletleri ilk denememde 9 dakika yerine 6 dakikada çevirince bir tarafı çok az pişmiş kaldı, ikinci turda süreye sadık kalınca kenarları gerçekten çıtır çıktı. Patatesin suyunu iyice süzmek de harcın dağılmamasında fark yaratıyor.
