A heart-healthy companion for grilled meat, smoky eggplant sauce is made by air-frying eggplant until smoky-charred, then mashing it with garlic and olive oil into a smooth sauce. It brings that charred aroma to the kitchen without heating up the whole oven.

How to make it?

Prick the eggplant

Wash the eggplants and prick them in a few spots with a fork.

Char in the air fryer

20 min

Arrange the eggplants in the air fryer basket and cook at 200°C for 18-20 minutes, turning halfway, until the skins wrinkle and the flesh softens. Without an air fryer, char them for a similar time under the grill setting of a preheated oven.

Peel the eggplant

Once cooled slightly, split the eggplants open and scoop the flesh out of the skin with a spoon.

Mash and mix

Mash the eggplant flesh with the garlic, olive oil, lemon juice and salt until smooth, then scatter the parsley on top and serve.

Reminder

Prick the eggplant in a few spots with a fork before air-frying; otherwise steam builds up inside and it can burst while cooking. This recipe does not contain a known allergen group.
