Kubdari, coming from the mountainous Svaneti region of Georgia, is prepared by filling yeasted bread dough with a spiced ground meat filling and baking it in the oven. When served hot, the meat filling inside the dough releases its juices, creating a satisfying flavor.

How to make it?

Knead the dough and let it rise

60 min

Knead the flour, yeast, warm water, salt, and olive oil into a smooth dough; let rise in a warm place for 60 minutes.

Prepare the filling

15 min

Knead the ground beef thoroughly with grated onion, cumin, red pepper flakes, and salt to prepare the filling.

Fill the dough and seal

20 min

Roll out the risen dough, place the filling in the center, gather the edges and turn seam-side down, then press gently to flatten.

Bake in the oven

30 min

Prick the top lightly with a fork and bake in a preheated oven until golden.

Reminder

Important: If you roll the dough too thin while filling it with the ground meat mixture, the meat juices may leak out — leave it medium-thick. Caution: Before putting it in the oven, prick the top lightly with a fork so steam doesn't build up and tear the dough. Allergen: contains wheat (gluten) and egg.

Adding plenty of hot and sweet red pepper to the ground meat gives kubdari its characteristic spicy flavor; you can adjust the amount to your taste.
