A staple of Japanese New Year tables, kuromame is made by simmering boiled black soybeans low and slow in a syrup balanced with soy sauce until glossy. Packed into a jar, it travels well in a lunchbox.
Drain and rinse the boiled black soybeans.
Bring the water, sugar, soy sauce and salt to a boil in a pot until the sugar fully dissolves.
Add the beans to the syrup and simmer covered over low heat for 45 minutes, skimming off the foam occasionally.
Take off the heat and let the beans rest in the syrup for at least 30 minutes so they absorb it.
Skim off the foam that rises to the top as the beans cook, or the syrup will turn cloudy. The skins tear easily while the beans are hot, so stir gently. Allergens: contains soy.
Leaving the beans in the syrup overnight after cooking deepens the colour and brings out more shine; this is how they are traditionally prepared in Japan.
