A light, spring-specific pilaf in which fresh asparagus is browned with onion in olive oil and cooked with rice. Freshened with lemon and dill, this recipe is one of the elegant main-dish options for meatless tables.

Sauté the onion

Sauté the finely chopped onion in olive oil until translucent.

Add the rice

Add the rinsed rice and stir for a few minutes.

Cook with hot water

Add the hot water and salt and cook over low heat until most of the water is absorbed.

Add the asparagus

Spread the chopped asparagus on top and turn off the heat, cover the pot, and let it soften in its own steam.

Stir the pilaf gently, drizzle lemon juice over it, and serve warm sprinkled with dill.

Reminder

Important: Be sure to snap off and discard the tough bottom ends of the asparagus, otherwise it will stay fibrous and tough. Olive oil pilafs are traditionally served warm or at room temperature.

Ölçüleri gram cinsinden verseniz daha net olur, bardak ölçüsü bende farklı çıktı.
