Onion is softened in olive oil and the rice cooks with grated lemon zest in this Greek pilaf, a classic side on souvlaki barbecue tables. Made with a light hand on the oil, it suits a low-calorie side for picnics and outdoor spreads.

How to make it?

Soften the onion

Cook the onion in the olive oil until soft and lightly translucent.

Add the rice

Add the rinsed rice and toast it, stirring, for 2 minutes.

Cook the rice

18 min

Add the hot water, salt and lemon zest, then cook covered over low heat for 18 minutes.

Rest and serve

10 min

Take it off the heat and let it rest, covered, for 10 minutes, then stir in the lemon juice and parsley before serving.

Reminder

Do not skip toasting the rice in the oil for 2 minutes before adding the liquid; it keeps the grains separate as they cook. Do not stir the rice before it has rested off the heat, or the grains will get crushed.

Bu pilavı önceden hazırlayıp ertesi gün ısıtarak servis edebilir miyim, yoksa tazeyken mi yenmesi gerekiyor? Mangal partisi için bir gün önceden hazırlayıp kapaklı bir kapta saklamayı düşünüyorum, ısıtırken kısık ateşte 2 dakika kadar buharda tutmam yeterli olur mu acaba?

Tarifte 18 dakika pişirme yazıyor ama benim ocağım kısık ateşte daha yavaş ısıtıyor, 22 dakikada tam oturdu. Limon kabuğu rendesini de bir tatlı kaşığından biraz fazla kullandım, tadı daha belirgin oldu.
