Lebanon's clotted cream ashta is made by slowly cooking milk and cornflour together and scenting it with rose water. Topped with fresh fruit, it makes a light dessert without any nuts.

Step by Step

How to make it?

1

Mix the milk and cornflour

5 min

Whisk the cornflour with a little of the cold milk into a smooth paste, then combine with the rest of the milk in a saucepan.

2

Cook over low heat

15 min

Add the sugar and cook over low heat, stirring constantly, for 15 minutes until it thickens.

3

Scent with rose water

5 min

Remove from heat, stir in the rose water, divide into bowls, and press cling film onto the surface before chilling.

4

Serve with fruit

5 min

Arrange the sliced strawberries and cherries over the chilled ashta cream and serve.

Reminder

Press cling film directly onto the surface of the cream as it cools, or a thick skin will form on top. Allergens: contains milk and dairy.
