A festive cookie from Jordanian baking, ma'amoul is made by filling semolina dough with a date paste and pressing it into a patterned mould before baking. Its lightly sweetened dough also makes it a fitting option for anyone after a lower-calorie treat.
Mix the semolina and melted butter together.
Let the semolina and butter mixture rest for five minutes; this lets the semolina absorb the fat.
Dissolve the yeast in the water, add it to the dough, and knead.
Mix the mashed dates with the cinnamon.
Take ball-shaped pieces of dough, fill with the date paste, and press into a mould to pattern them.
Bake in an oven preheated to 180°C for fifteen minutes, until the bottoms turn lightly golden.
Dust the cooled cookies with powdered sugar and serve.
Do not press too hard into the mould, or the cookie may crack while baking. Allergens: contains gluten (semolina) and dairy (butter).
If you do not have a mould, you can press a pattern with the back of a fork; it will not fully match the traditional shape, but the flavour stays the same.
