Teh halia is Malaysia's spiced hot drink, made by simmering black tea with fresh ginger, cardamom, cinnamon and cloves before pulling it with milk to build a frothy top. It is often served at weddings and celebrations.

How to make it?

Simmer the spices

Bring the water to a boil with the sliced ginger, crushed cardamom, cinnamon stick and cloves, and let it bubble for 5 minutes.

Steep the tea

5 min

Add the black tea, lower the heat and let it steep for 3 minutes.

Pull with milk

10 min

Add the milk and sugar, then pull the mixture between two cups from a height several times until it froths, strain and serve hot.

Reminder

When pulling the tea from a height, start low and gradually raise it to avoid splashing. Allergens: contains dairy.

Bu çayı geçen ay kız kardeşimin nişan hazırlığında yaptım, kakuleyi ezerken taneleri iyice dağılınca aroma çok daha güçlü çıktı; çekme işlemini üç kez tekrarlayınca köpük tam istediğim kıvama geldi.
