Tangerine peel jam is a practical, waste-reducing recipe made by lightly drying the peels in the air fryer to remove bitterness, then simmering them with sugar. The drying step softens the peel so it absorbs the syrup more easily.

Boil the peel strips in plenty of water and drain, repeating this twice until the bitterness fades significantly.
Arrange the drained peel strips in a single layer in the air fryer basket and dry lightly at 150°C for 8 minutes; if you don't have an air fryer, dry in an oven preheated to 150°C for the same time.
Simmer the dried peel strips with the sugar, water and lemon juice over low heat for 15 minutes until thickened.
Ladle the hot mixture into sterilised jars and seal the lids tightly.
Clean off as much of the bitter white pith as possible; leaving it makes the result too bitter. Don't over-dry the peels in the air fryer, or they'll harden too much to absorb the syrup.
Cutting the peel strips thinner shortens the simmering time and keeps the texture softer.
