A Peruvian street classic, mazamorra morada is a dessert made by simmering purple corn for a long time with cinnamon, cloves and dried fruit, then thickening it with cornstarch. Served chilled in small jars, it travels well in a lunchbox.

Divide into small jars and chill in the fridge for at least 30 minutes before serving.
Don't discard the purple corn husks while boiling, most of the deep color comes from them; after straining, press the husks with a spoon to get the last bit of color out too.
