A favourite on Argentine breakfast and brunch tables, milanesa a caballo tops a chicken schnitzel — its breadcrumb coating spiked with chilli flakes and grated parmesan — with a fried egg. The name, meaning "on horseback", comes from the egg riding on top of the schnitzel.

How to make it?

Pound and season the chicken

Pound the chicken breast thin, season with salt, black pepper and chilli flakes.

Coat and fry

Dredge the chicken in flour, dip in one beaten egg, then coat in the breadcrumbs mixed with parmesan, and fry in hot oil for 4 minutes per side, 8 minutes total.

Fry the egg

Fry the remaining two eggs in a separate pan for 3 minutes, keeping the yolk runny.

Serve

Place the fried egg on top of the schnitzel and serve hot.

Reminder

Use plastic wrap while pounding the chicken thin, otherwise bits of meat can splatter. Allergens: contains gluten, egg and dairy (parmesan).

Parmesan peyniri bulamadığım için galeta ununa rendelenmiş kaşar peyniri ekledim, tadı beklediğimden daha yumuşak oldu ama yine de güzel bir kabuk oluştu ve çocuklar bile şikayet etmedi.
