Sauté the onion, carrot, and zucchini in olive oil until soft.
Add the grated tomato and vegetable stock and bring to a boil, then cook over low heat for 15 minutes.
Add the boiled beans and small pasta, then cook for another 10 minutes until the pasta is soft.
Divide the hot soup among bowls and serve garnished with fresh basil leaves.
Important: Adding the pasta to the soup too early makes it overly soft — adding it in the last 10 minutes preserves the right texture balance. Contains gluten (pasta), so not suitable for celiac patients.
If you chop the vegetables into similar sizes, they all cook in the same time; drizzling a few drops of olive oil on top before serving completes the classic touch of Italian cuisine.
