Prepare the fish

Salt the cleaned picarel and coat in flour, shaking off the excess.

Fry in hot oil

Fry the fish in plenty of hot oil until both sides are golden brown.

Drain the excess oil on paper towels and serve hot with lemon slices.

Reminder

Important: Since picarel are small, the oil really needs to be hot, or the fish will absorb oil. Allergen: contains fish and gluten (flour). Caution: flour the fish right before frying — if floured and left to sit beforehand, the flour becomes damp and sticky.

If you soak the picarel in salted water for a few minutes before frying, it both freshens up and takes on salt more evenly.
