Boil the drained beans in fresh water for thirty minutes, until soft.
Mash the cooked beans together with the onion and tomato using a fork.
Split the bread in half, spread the bean mash, sprinkle the light cheese on top, and bake in an oven preheated to 200°C for fifteen minutes, until the cheese melts.
Sprinkle with chili pepper and cilantro and serve hot.
If the bread is very stale, dampen it slightly before baking, or the edges will turn too hard. Allergens: contains gluten (bread) and dairy (cheese).
