Set the air fryer to 200°C and lay the pastrami slices in a single layer in the basket, cooking for 10 minutes until the edges curl and lightly char. Without an air fryer, heat the oven to 200°C and crisp the pastrami on a baking sheet for the same time.
Layer two lettuce leaves, spread with mustard, then add the crisped pastrami, a slice of kashar cheese and pickle, and roll tightly. Serve immediately.
