Muhallebi is a plain, velvety traditional Turkish cold dessert made by cooking milk, rice flour and cornstarch over low heat. Served sprinkled with cinnamon on top, this dessert is loved by all ages.
Warm most of the milk with the sugar in a pot without boiling.
Mash the rice flour and cornstarch with the remaining cold milk until lump-free, then add to the hot milk; cook over low heat, stirring constantly, until it thickens.
Stir in the vanilla, then divide the mixture among serving bowls.
Once the bowls reach room temperature, chill in the refrigerator for at least one hour; sprinkle with optional cinnamon before serving.
Important: Keep stirring continuously while adding the starch to the milk, otherwise it may clump at the bottom of the pot. Allergen: contains milk and dairy products. Can be kept in the refrigerator in a sealed container for three days.
If you keep the muhallebi on low heat and stir it patiently while cooking, the consistency turns out smoother and glossier.
