Nasi kuning is the turmeric-yellow rice Indonesians place at the centre of the table for birthdays and celebrations, made by cooking rice with coconut milk, turmeric, lemongrass and bay leaf in a pressure cooker. Spiced and hearty, it can be served on its own as a main course.

How to make it?

Rinse the rice

Rinse the rice several times until the water runs clear, then leave it to drain.

Load the pressure cooker

Put the rinsed rice into the pressure cooker and add the coconut milk, water, turmeric, garlic, lemongrass, bay leaf and salt, then stir gently.

Pressure-cook

25 min

Seal the lid, bring the pressure cooker up over medium heat until it whistles, then cook over low heat for 12 minutes before removing from the heat and letting the pressure release naturally.

Fluff and serve

5 min

Remove the lemongrass and bay leaf, fluff the rice with a fork and serve hot.

Reminder

Rinse the rice until the water runs clear before cooking, or the grains will clump together. Remember to remove the lemongrass and bay leaf before serving.

Düdüklüde ıslık çaldıktan sonra 12 dakika pişirdim, tarifin dediği gibi taneler birbirinden ayrı kaldı. Sadece zerdeçalı biraz fazla koyduğum için rengi olması gerekenden koyu çıktı, tadı yine de dengeliydi.

Harika bir renk ve koku çıktı, 2 su bardağı pirinç tam kıvamında pişti. Limon otu bulamazsam yerine bir şey önerir misiniz, yoksa hiç eklemesem tadı çok mu değişir?
