A hearty staple of Pakistani home cooking, keema anda is finished by cracking eggs over a long-simmered minced meat and tomato sauce. The slow simmer lets the spices work into the meat, resulting in a nut-free, filling main course.
Sauté the onion, garlic and ginger in olive oil until soft.
Add the minced beef and cook, stirring, until it browns.
Add the chopped tomato, paprika, cumin and salt, then simmer covered over low heat for 40 minutes.
Crack the eggs one by one over the minced meat sauce, cover and cook for 8 more minutes until the whites are set.
Garnish with parsley and serve hot.
Don't simmer the sauce for less than 40 minutes; a shorter simmer keeps the spices from working into the meat and the flavour stays shallow. Allergens: contains egg.
Swapping the paprika for a hot chili powder makes the sauce sharper; in that case I would halve the amount.
