The chutney that accompanies bread and rice at Pakistani tables is made here by quickly softening tomatoes in a pressure cooker. Sweetened with a sugar substitute instead of sugar, this version offers a keto-friendly sauce that travels well in a picnic basket.

How to make it?

Sauté the aromatics

Sauté the onion, garlic and ginger in olive oil until soft.

Add the tomatoes

Add the chopped tomatoes, cumin, paprika and salt, then seal the pressure cooker lid.

Pressure cook

20 min

Once the cooker reaches pressure, cook for 20 minutes and let the pressure release naturally.

Thicken

15 min

Open the lid, stir in the sugar substitute, and simmer uncovered for 15 more minutes until thickened.

Cool and store

30 min

Transfer to a jar and let cool at room temperature for 30 minutes, then it's ready to pack for a picnic.

Reminder

Don't skip the uncovered simmering step; without it the chutney stays watery and separates in the jar.

Tatlandırıcı yerine bal kullanabilir miyim, yoksa ketojenik özelliği bozulur mu? Evde tatlandırıcı kalmamıştı, altı kavanozluk bu seriyi bu hafta sonuna kadar yetiştirmem gerekiyor da ondan soruyorum.

Altı kavanozluk bir seri yaptım, piknik sepetine üç tanesini koyup kalanını buzdolabında sakladım, hepsi bir haftada bitti ve tatlandırıcı sayesinde kimse alışılmış tattan eksiklik hissetmedi.

Kapak açık pişirme adımını 15 dakika yerine 22 dakikaya çıkardım çünkü domateslerim çok sulu çıktı, sonunda tarifteki gibi koyu bir kıvam yakaladım ve kavanoza dökünce akmadı.
