Sauté the onion in olive oil, add the garlic, turmeric and cumin, and cook for 2 more minutes.
Add the lentils, tomato, salt and water, and once boiling, lower the heat and simmer for 55 minutes, stirring occasionally, until the lentils break down into a velvety texture.
Ladle the daal into bowls, scatter fresh coriander on top and serve hot.
Remember to stir the daal occasionally as it simmers, since lentils can catch on the bottom of the pot. If the texture seems too thick, thin it with a few spoons of hot water before serving.
