Once the cooked beets have cooled slightly, peel and grate them or mash with a fork.
Mix the mashed beets with strained yogurt, crushed garlic, walnuts and salt.
Drizzle with olive oil and garnish with walnut pieces, then serve cold.
Important: When baking the beets, wrapping them in aluminum foil and cooking them with the skin on both enhances their sweetness and keeps your hands from staining. If you roast the beets in the oven instead of boiling them, they don't lose their juice and the flavor becomes much more concentrated; if you let them cool completely without opening the foil, peeling also becomes much easier.
