Pastel de Chaves is a pastry from the Portuguese town of Chaves, made by wrapping thinly rolled puff pastry around spiced minced beef and baking it. Because the pastry folds easily, it is simple to make in bulk, which is why it is often served on large trays at parties.

How to make it?

Brown the meat

Sauté the onion, add the crushed garlic, then stir in the minced beef and cook for 8 minutes until it changes colour.

Cool

30 min

Stir in the pepper paste, bay leaf and salt, and cook for another 10 minutes over low heat, then let it cool completely.

Wrap

Cut the puff pastry into rectangles, spoon the cooled filling into the centre of each, and roll into a log shape.

Bake

20 min

Brush with egg yolk and bake in an oven preheated to 200°C for 20 minutes until golden and crisp.

Reminder

Let the filling cool completely before wrapping it in the pastry, hot filling melts the puff pastry and makes it sticky, blurring the layers. Allergens: contains wheat (gluten) and egg.
