A lightly sweet vegetable dish where leek is slowly cooked over low heat with ground meat and rice alongside carrot, frequently found on winter tables. Its flavor, balanced by a squeeze of lemon, stands out even more when served hot.

How to make it?

Brown the ground meat and onion

Sauté the onion in oil until it turns pink, then add the ground meat, and cook until it releases and reabsorbs its liquid.

Add the carrot and tomato paste

Add the carrot and tomato paste and sauté for a few minutes, then add the leeks to the pot.

Cook with rice and water

Add the rice, salt, black pepper, and water, cover with a lid, and cook over low heat until the leeks and rice soften.

Serve with lemon

After removing from heat, squeeze a little lemon on top if desired and serve hot.

Reminder

Important: Before chopping the leek, cut it into rings and rinse thoroughly in plenty of water to remove soil and sand trapped between the leaves. Once the rice is added, don't open and close the lid too often, as losing steam delays the rice from cooking. Flavoring with a lemon wedge before serving lightens the dish.
