Piticim köfte, unique to the Bafra district of Samsun, is made by quickly frying small, flat minced-meat köfte in butter. With its simple spice mix and quick cooking time, it's one of the fast solutions for everyday meals.

Step by Step

How to make it?

1

Prepare the filling

10 min

Knead the ground meat thoroughly with grated onion, breadcrumbs, baking soda, salt and black pepper.

2

Shape small meatballs

10 min

Pinch off walnut-sized pieces from the mixture and press them in your palm to form small, flat meatballs.

3

Fry in butter

15 min

Melt the butter in a pan and cook the meatballs over medium heat until both sides are nicely browned.

Reminder

Important: Shaping the meatballs small and thin lets the inside cook as quickly and evenly as the outside. Caution: Use the butter over medium heat — it can burn quickly over high heat. Allergens: the meatball mixture contains breadcrumbs, which have gluten.

Editor's Note Editörün Notu

Adding a pinch of baking soda to the mixture helps keep the meatballs softer.
