A winter jam served in candied slices, prepared by long cooking of orange peels with sugar after removing their bitterness. With its intense citrus aroma and lightly bittersweet taste, it adds a different flavor to breakfast tables.

Step by Step

How to make it?

1

Prepare the peels

30 min

Cut the orange peels into thin strips and soak in water for a few days, changing the water several times a day to remove the bitterness.

2

Boil and drain

15 min

Boil the soaked peels in clean water a few times and drain; this step also removes the remaining bitterness.

3

Cook with sugar

30 min

Place the drained peels in a pot with sugar and water and cook over low heat until the peels turn translucent; skim off the foam that forms.

4

Thicken and jar

10 min

Add the lemon juice and boil a few minutes more. Important: drop some on a plate — if a trace remains, the consistency is ready; fill sterilized jars with the boiling jam and let cool.

Reminder

Important: To remove bitterness from the peels, soak them in water for a few days, changing the water several times a day, otherwise the jam stays bitter; skim the foam that forms during cooking. Contains no flour, milk, or eggs; it is plant-based and gluten-free. Fill sterilized jars with the boiling jam and store in a cool place.

Editor's Note Editörün Notu

If you prick the peels with a needle before cooking, they absorb the sugar more easily and take on a translucent, glossy look.
