A sharp table sauce from Saudi Arabian cuisine, sahawiq is made by finely blending fresh green chillies, cilantro and garlic together with tomato. Its sugar-free composition makes the sauce a diabetes-friendly table companion.

Step by Step

How to make it?

1

Prepare the vegetables

10 min

Roughly chop the green chillies, tomato, cilantro and garlic cloves.

2

Blend

10 min

Blend the chopped vegetables with the lemon juice, cumin and salt until you get a smooth sauce.

3

Rest

15 min

Chill the sauce for at least 15 minutes before serving.

Reminder

Using the green chillies with their seeds makes the sauce noticeably hotter; start with a small amount and taste as you go.

Editor's Note Editörün Notu

Letting the sauce rest in the fridge overnight lets the garlic and cilantro flavours meld into a deeper whole.
