Sambal Terasi is a technical Indonesian sauce made by air-frying shrimp paste and pounding it with red chili and garlic into a fiery condiment. Toasting the shrimp paste for exactly the right time is what settles its sharp smell into balance.

How to make it?

Toast the shrimp paste

Air-fry the shrimp paste at 180°C for 6 minutes. If you do not have an air fryer, you can toast it in a preheated oven instead.

Roast the chilies

Air-fry the red chilies and garlic at 180°C for 9 minutes.

Pound

8 min

Pound the roasted ingredients with the lemon juice in a mortar until smooth.

Reminder

Do not over-toast the shrimp paste, or burnt paste will leave a bitter taste in the sauce. If you do not have an air fryer, you can toast it in a preheated oven instead. Allergens: contains shellfish (shrimp paste).
