A quick Far East-inspired vegetable dish where colorful vegetables are stir-fried at high heat with garlic, ginger and soy sauce, keeping their crisp texture. Served as a practical main or side dish alongside rice or noodles.

How to make it?

Heat the pan

Heat the oil thoroughly over high heat in a wide pan.

Sauté the firm vegetables

Add the carrots and broccoli and stir-fry for a few minutes, stirring constantly.

Add the remaining vegetables

Add the bell pepper and green beans, and stir-fry over high heat with the garlic and ginger. Note: the vegetables should stay crisp, don't overcook.

Sauce and serve

Add the soy sauce and sesame oil, stir quickly, then sprinkle with sesame seeds and serve hot.

Reminder

Important: Cut the vegetables into similar thickness so they cook evenly over high heat. Preheat the pan thoroughly and add the vegetables a little at a time, stirring constantly to sauté; otherwise the vegetables will steam and release their water. Soy sauce is salty, so taste before adding extra salt.
