Add the hot water and salt; once it boils, reduce the heat, cover with a lid, and cook until the liquid is absorbed.
Turn off the heat, cover the lid with a clean cloth, and let it steam for 10 minutes. Fluff with a fork and serve.
Important: Briefly sautéing the vegetables together with the rice helps the grains cook without falling apart. Contains no gluten, but the recipe doesn't include any ingredient with flour; it's still served without claiming to be gluten-free. Keeps in the fridge for a few days.
