A refreshing summer pilaf in which fresh purslane is browned in olive oil with tomato and cooked with bulgur, served with garlicky yogurt. With its slightly tangy texture and filling character, it's one of the practical main dishes for hot days.
Sauté the finely chopped onion in olive oil until it turns pink, then add the grated tomato and sauté for a few more minutes.
Add the washed bulgur and stir until it absorbs the oil.
Add hot water and salt, then cook over low heat until most of the water is absorbed.
Spread the chopped purslane over the top, turn off the heat, cover with the lid and let it steam in its own heat for 5 minutes.
Mix the yogurt with the crushed garlic, transfer the pilaf to a warm or cold serving plate, and serve alongside it.
Important: Add the purslane to the pilaf last and cook it briefly — if cooked too long, it releases too much liquid and waters down the pilaf. Allergen: contains wheat (gluten) and dairy (yogurt).
You can serve the pilaf warm or cold; after a day in the fridge, the flavors meld together even further.
