Sıkma pilav is a Southeastern Anatolian tradition in which cooked rice pilaf is packed tightly into a mold and turned out as a neat dome for the table. Getting it to hold together without collapsing when unmolded depends on cooking the rice to just the right texture and packing it firmly.
