Syrniki, the beloved breakfast of Ukrainian cuisine, is obtained by frying small patties made from a dough of curd cheese. Served with sour cream or jam, this recipe appeals to both sweet and savory palates.

Step by Step

How to make it?

1

Prepare the dough

10 min

Mix the curd cheese, egg, sugar, salt, and flour into a smooth dough.

2

Shape it

5 min

Shape into small flat patties and lightly coat them in flour.

3

Fry

10 min

Fry the patties in hot oil on both sides until golden.

4

Serve

2 min

Serve hot with sour cream or jam.

Reminder

Allergen: contains gluten, egg, and dairy products. Important: If the curd cheese (lor) is too wet, drain it a bit more in a strainer, otherwise the dough will fall apart and absorb too much oil when frying. Flattening the patties slightly before frying ensures even cooking.

Editor's Note Editörün Notu

Adding a pinch of grated lemon zest to the dough gives the classic flavor a pleasant freshness. In Ukraine, syrniki is also found on tables both as breakfast and as a light dessert alternative.
