A lesser-known but nutritious legume dish in which soybeans are cooked in olive oil with carrot and fresh green beans. Served lukewarm or cold, this recipe suits light dinner tables.

How to make it?

Sauté the onion

Heat the olive oil and sauté the finely chopped onion until lightly pink.

Add the tomato paste and vegetables

Add the tomato paste and sauté briefly, then add the carrot and fresh green beans and stir for a few minutes.

Cook the soybeans

Add the soaked soybeans to the pot, add hot water, sugar and salt, cover with a lid, and cook over low heat until the beans are thoroughly softened.

Check the consistency and serve

Once the beans have softened, check the consistency of the sauce, boil for a few more minutes if needed, and serve warm or cold.

Reminder

Important: Soak the soybeans in plenty of water the night before — if they're not soaked enough, the cooking time will be noticeably longer. Contains no allergen.
