A practical street-food egg recipe from China, soy-glazed air-fried eggs are made by cracking the shells of hard-boiled eggs and briefly cooking them in the air fryer with soy sauce and spice to create a marbled pattern. The sauce seeping through the cracks gives the eggs their marbled look.
Boil the eggs in boiling water for 9 minutes, then plunge into iced water.
Gently tap the cooled eggshells with the back of a spoon to create a web of cracks, without peeling them.
Mix the soy sauce, water, brown sugar, cinnamon stick and star anise, and soak the cracked eggs in this mixture for at least 20 minutes.
Remove the eggs from the sauce and air-fry at 160°C for 8 minutes; if you don't have an air fryer, bake in an oven preheated to 160°C for the same time.
Tap the shells gently with the back of a spoon; hitting too hard can shatter the egg. Allergens: contains egg, soya.
The longer the eggs sit in the soy sauce, the deeper the pattern becomes; leaving them overnight gives the most striking result.
